The origin and legend of leaf tea...........
![]() It was about the year of 2737 B.C.- and according to popular legend, China's mythical second emperor, Shen Nung, known as the Divine Healer, discovered tea leaves when leaves of the Camellia sinensis plant drifted into a heated open pot of water through an open window. It is sad to report that the adventurous Chinese leader supposedly ate 365 medicinal plants over the course of his lifetime -- until he turned green and died from toxic overdoses. (we'll get into the evils of excess on another day...) What the emporer learned was that when infused in hot water and then slowly sipped not only tasted good but.....this fragrant herbal drink seemed to clear his head, enlighten his spirit and help his mind focus.

![]() White Tea From China
Rare White Tea has arrived in North America! While Chinese tea drinkers have been hip to White Tea’s many health benefits since the Ming Dynasty, until recently White Tea was virtually unknown outside of Asia. Not anymore.....
So, what exactly is this rare White Tea anyway? Well.......most tea aficionados know that all tea comes from the same source: the Camilla Sinensis tea bush. Whether a tea leaf winds up in a cup of green, black, or oolong tea depends
entirely on what happens after it is plucked. Black tea derives its dark color and full flavor from a complex fermentation process that includes exposing crushed tea leaves to the air for a strictly defined number of minutes. White Tea was once reserved only for the cups of emperors and nobility. High mountain China White Tea still remains one of the rarest of all teas in the world. These tea leaves are painstakingly hand plucked only two days of the year! The tea leaves are harvested just before the leaf opens at which time it is then minimally processed. So small is the harvest of White Tea, so high is the demand, that it is one of the world’s most expensive teas. Modern research shows that White Tea retains the highest levels of powerful, health promoting polyphenols and antioxidants that can help build the immune system and reward sippers with a healthier, and more enjoyable life.Read more about White Tea

What are antioxidants?
Antioxidants which are found naturally in Green Tea, are substances that may protect cells from the damage caused by unstable molecules known as free radicals. Free radical damage may lead to cancer. Antioxidants interact with and stabilize free radicals and may prevent some of the damage free radicals otherwise might cause. Examples of antioxidants include beta-carotene, lycopene, vitamins C, E, and A, and other substances we need for good health.
